Tailgating Done Yummy!

When people ask “are you ready for football?” we all know they are really talking about the food. Tailgating has become somewhat of an art form full of delicious treats. So whether you stay at home, go to your family or friends, or hit the road for mid-field viewing, you’ll start the season off right with these tasty recipes!

Chunky Tomato Salsa (makes 1 bowl of salsa)

Ingredients:
1 clove of garlic, very finely chopped
1 medium onion, very finely chopped
3 large tomatoes, very finely chopped
1 lime, juiced
1 tbsp chopped fresh coriander (sub 1 tsp of dried coriander)
½ tsp chili powder
3 pinches of salt & pepper
½ tsp cumin

Tip: For best results, leave for 30 minutes to marinate

Buffalo Chicken Dip

Ingredients: 
2 (10 oz) cans chunk chicken, drained
2 (8 oz) packages cream cheese, softened
1 cup Ranch dressing
¾ cup pepper sauce (such as FRANK’S Red Hot®)
1-1/2 cups shredded cheddar cheese
1 bunch of celery, cleaned and cut into 4” pieces
1 (8 oz) box crackers

Tip: Aluminum foil can be used to keep food moist, cook it evenly and make clean-up easier.

Simple Turkey Chili

Ingredients: 
1-1/2 tsp olive oil
1 lb ground turkey
1 onion, chopped
2 cups water
1 (28 oz) can crushed tomatoes
1 (16 oz) can kidney beans – drained, rinsed, and mashed
1 tbsp garlic, minced
2 tbsp chili powder
½ tsp paprika
½ tsp dried oregano
½ tsp ground cayenne pepper
½ tsp ground cumin
½ tsp salt
½ tsp ground black pepper

Chocolate Scotcheroos 

Ingredients: 
1 cup light corn syrup
1 cup sugar
1 cup creamy peanut butter
6 cups crispy rice cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips

Tip: Before measuring the corn syrup, coat your measuring cup with cooking spray–the syrup will pour easily out of the cup.
